Description
Moist, spiced pumpkin bread drizzled with a sweet maple glaze. The perfect cozy fall treat for breakfast, dessert, or sharing with family.
Ingredients
1 ¾ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
¼ tsp ground cloves
2 large eggs
1 cup pumpkin purée
½ cup vegetable oil
¾ cup brown sugar
¼ cup granulated sugar
1 tsp vanilla extract
1 cup powdered sugar
2 tbsp pure maple syrup
1 tbsp milk
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
3. In another bowl, whisk eggs, pumpkin purée, oil, brown sugar, granulated sugar, and vanilla until smooth.
4. Gradually stir dry ingredients into wet mixture until just combined. Do not overmix.
5. Pour batter into prepared pan and smooth the top.
6. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
8. Whisk glaze ingredients together and drizzle over cooled bread.
Notes
Use pure pumpkin purée, not pumpkin pie filling.
The maple glaze thickens quickly, add a splash of milk if needed.
Bread tastes even better the next day as the flavors deepen.
Try adding chocolate chips or chopped walnuts for variety.
