Ingredients
1 ball pizza dough (store-bought or homemade, rested at room temperature 20–30 minutes)
¾ cup Alfredo sauce (homemade or high-quality store-bought)
8 ounces low-moisture mozzarella, grated
3 ounces fresh mozzarella, diced and patted dry
Grated Parmesan cheese, to taste
Kosher salt, to taste
1½ tablespoons fresh chives, thinly sliced (optional)
Instructions
1. Preheat your oven to 500°F (260°C) and position a rack on the lowest setting. Lightly oil a pizza pan or baking sheet.
2. On a floured surface, stretch the dough into a 12-inch round. Create a slightly thicker border for the crust.
3. Spread Alfredo sauce evenly over the dough, leaving a ½-inch edge uncovered.
4. Sprinkle grated low-moisture mozzarella over the sauce, then dot with diced fresh mozzarella.
5. Top with a generous amount of grated Parmesan and a pinch of kosher salt.
6. Place the pizza on the lowest oven rack and bake for 9–11 minutes, or until the crust is golden and cheese is bubbling.
7. Remove from oven and rest for 1–2 minutes. Garnish with chives, slice, and serve hot.

For best results, use both types of mozzarella to balance creaminess and structure.
